Kefir is made by fermenting kefir “grains” (a culture of bacteria and yeast) with milk or sugar water.
While it’s traditionally made with dairy, coconut milk is a great alternative for those with sensitivities. 🥥 Other plant-based milks can work too, but they need added sugar to keep the grains alive.
For a dairy-free option, water kefir is made with sugar water instead of milk. It needs occasional “resetting” with baking soda, but can be flavored with berries for a fizzy, fermented drink. 😋
I mostly use milk kefir in fruit smoothies or popsicles for the kids, but it can also replace yogurt, buttermilk, or sour cream in recipes.
